White fungus dessert

White fungus or snow fungus is a kind of jelly fungus (kind of mushroom). Like its name, it is white in color. Normally we can get dried white fungus from traditional Chinese medicine shop, rather than fresh white fungus.

My mum used to double boil it with rock sugar. It helps to sooth our lungs. Besides, white fungus soup is the best cooling tea during summer.

  1. Place the fungus in a bowl and add warm water to cover.  Soak for 15 minutes, then cut away any hard or discoloured portions and cut the rest into bite-size pieces.
  2. Put the soaked fungus, rock sugar  in a double boiler. I used slow cooker to boil it for three hours.

    3) Add ice and canned longans, if desired, then serve with soup spoons.
